Ingredients 

Main Ingredients

  • 8 cups water
  • 1 cup dried shiitake mushrooms
  • ¼ cup miso paste
  • 2 tablespoon soy sauce
  • 200 grams soba noodles
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 stalks green onions, sliced
  • 1 cup spinach leaves

Instructions 

  1. 1. In a pot, bring water to a boil. Add dried shiitake mushrooms and simmer for 10 minutes.
  2. 2. Remove mushrooms, slice them, and return to the pot. Add minced garlic and ginger. Simmer for another 5 minutes.
  3. 3. Stir in miso paste and soy sauce until dissolved. Add soba noodles and cook according to package instructions.
  4. 4. Add spinach leaves and sliced green onions. Cook for an additional 2 minutes. Serve hot.
