Ingredients 

Main Ingredients

  • 1 large butternut squash peeled and cubed
  • 2 tablespoon olive oil
  • 1 tablespoon white miso paste
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 2 tablespoon sesame seeds toasted
  • 2 cups mixed greens

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25-30 minutes until tender and caramelized. Let cool.
  4. In a bowl, whisk together miso paste, sesame oil, soy sauce, rice vinegar, and honey.
  5. In a large bowl, combine roasted squash, mixed greens, and toasted sesame seeds. Drizzle with dressing and toss to coat.
