Miso-Maple Sweet Potato Tacos

Main Ingredients
- 2 large sweet potatoes peeled and cubed
- 2 tablespoon olive oil
- 2 tablespoon maple syrup
- 1 tablespoon miso paste
- 1 teaspoon soy sauce
- 8 small tortillas
- 1 cup red cabbage shredded
- 1 avocado avocado sliced
- 0.5 cup cilantro chopped
- 1 lime lime cut into wedges
Preheat oven to 400°F (200°C).
In a mixing bowl, whisk together olive oil, maple syrup, miso paste, and soy sauce.
Add cubed sweet potatoes to the bowl and toss to coat.
Spread sweet potatoes on a baking sheet and roast for 25-30 minutes, until tender and caramelized.
Warm tortillas in the oven for a few minutes.
Assemble tacos by adding roasted sweet potatoes, shredded cabbage, avocado slices, and chopped cilantro to each tortilla.
Serve with lime wedges on the side.
