Ingredients 

Main Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 2 tablespoon olive oil
  • 2 tablespoon maple syrup
  • 1 tablespoon miso paste
  • 1 teaspoon soy sauce
  • 8 small tortillas
  • 1 cup red cabbage shredded
  • 1 avocado avocado sliced
  • 0.5 cup cilantro chopped
  • 1 lime lime cut into wedges

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, whisk together olive oil, maple syrup, miso paste, and soy sauce.
  3. Add cubed sweet potatoes to the bowl and toss to coat.
  4. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes, until tender and caramelized.
  5. Warm tortillas in the oven for a few minutes.
  6. Assemble tacos by adding roasted sweet potatoes, shredded cabbage, avocado slices, and chopped cilantro to each tortilla.
  7. Serve with lime wedges on the side.
