Ingredients 

Main Ingredients

  • 4 cups chicken or vegetable broth
  • 2 tablespoon miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 200 g ramen noodles
  • 1 cup sliced mushrooms
  • 2 cups baby spinach
  • 2 stalks green onions, sliced
  • 1 tablespoon sesame oil

Instructions 

  1. 1. In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1-2 minutes until fragrant.
  2. 2. Add broth, miso paste, and soy sauce. Stir until miso is dissolved. Bring to a boil.
  3. 3. Add mushrooms and cook for 5 minutes. Add ramen noodles and cook according to package instructions.
  4. 4. Stir in baby spinach and cook until wilted, about 1 minute.
  5. 5. Serve hot, garnished with sliced green onions.
