Ingredients 

Main Ingredients

  • 2 pcs Eggplant medium-sized
  • 1 head Broccoli cut into florets
  • 2 tablespoon Olive oil
  • 3 tablespoon Miso paste
  • 1 tablespoon Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Honey
  • 1 clove Garlic minced

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Cut the eggplant into cubes and the broccoli into florets. Place them on a baking sheet.
  3. In a mixing bowl, whisk together the miso paste, soy sauce, rice vinegar, honey, and minced garlic.
  4. Drizzle the olive oil over the vegetables and toss to coat. Then, pour the miso mixture over the vegetables and toss again.
  5. Roast in the preheated oven for 20 minutes, or until the vegetables are tender and slightly caramelized.
  6. Serve hot and enjoy!
