Ingredients 

Main Ingredients

  • 1 cup Millet
  • 2 cups Water
  • 1 cup Pomegranate seeds
  • ½ cup Fresh mint leaves chopped
  • 1 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper freshly ground

Instructions 

  1. 1. Rinse the millet under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the millet, reduce heat, cover, and simmer for 15-20 minutes until water is absorbed and millet is tender.
  3. 3. Fluff the millet with a fork and let it cool.
  4. 4. In a large bowl, combine the cooled millet, pomegranate seeds, chopped mint leaves, olive oil, lemon juice, salt, and black pepper.
  5. 5. Toss everything together until well mixed. Serve chilled or at room temperature.
