  • 2 large sweet potatoes sliced into rounds
  • 1 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 0.5 cup sliced pepperoni
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Instructions 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange the sweet potato rounds on the baking sheet in a single layer.
  3. Bake the sweet potato rounds for 15 minutes, or until they are tender.
  4. Remove the baking sheet from the oven and spread a spoonful of pizza sauce on each sweet potato round.
  5. Sprinkle shredded mozzarella cheese and place a slice of pepperoni on top of each round.
  6. Sprinkle dried oregano and basil over the mini pizzas.
  7. Return the baking sheet to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool slightly before serving.
