  • 12 pieces Mini bell peppers halved and seeded
  • 1 cup Cooked quinoa
  • 0.5 cup Black beans rinsed and drained
  • 0.5 cup Corn kernels fresh or frozen
  • 0.5 cup Shredded cheese cheddar or your choice
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine cooked quinoa, black beans, corn, shredded cheese, olive oil, cumin, chili powder, salt, and black pepper.
  3. Stuff each mini bell pepper half with the quinoa mixture.
  4. Place the stuffed peppers on a baking sheet and bake for 15-20 minutes, until the peppers are tender and the filling is heated through.
  5. Serve warm and enjoy!
