Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Carrots, diced
  • 2 Celery Stalks, diced
  • 1 zucchini Zucchini, diced
  • 1 can Diced Tomatoes (14.5 oz)
  • 6 cups Vegetable Broth
  • 1 can Cannellini Beans (15 oz), drained and rinsed
  • 1 cup Pasta (small shapes like ditalini or elbow)
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • to taste Salt and Pepper
  • 1 cup Fresh Spinach chopped

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the onion and garlic, and sauté until the onion is translucent.
  3. 3. Add the carrots, celery, and zucchini, and cook for about 5 minutes.
  4. 4. Stir in the diced tomatoes, vegetable broth, and beans.
  5. 5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. 6. Add the pasta, oregano, and basil. Cook until the pasta is tender.
  7. 7. Season with salt and pepper to taste.
  8. 8. Stir in the spinach and cook until wilted.
  9. 9. Serve hot.
