- 4 unit Corn Tortillas
- 1 cup Cheddar Cheese, shredded

- 1 unit Bell Pepper, diced
- 1 unit Jalapeño, diced

1. Heat olive oil in a skillet over medium heat.
2. Add diced onion, bell pepper, and jalapeño. Sauté until softened.
3. In a bowl, whisk the eggs with a pinch of salt and pepper.
