Ingredients 

Main Ingredients

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon Meyer lemon zest
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions 

  1. Preheat your oven to 375°F (190°C). Grease and flour your madeleine pan.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the eggs and sugar until pale and thick. Add the vanilla extract and Meyer lemon zest.
  4. Gently fold the dry ingredients into the wet mixture. Add the melted butter and fold until just combined.
  5. Spoon the batter into the prepared madeleine pan, filling each mold about ¾ full.
  6. Bake for 10 minutes, or until the edges are golden brown and the centers spring back when touched.
  7. Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
