Ingredients 

Main Ingredients

  • 4 cups Corn kernels (fresh or frozen)
  • 1 cup Heavy cream
  • 2 cups Chicken broth
  • 1 cup Cotija cheese, crumbled
  • 1 teaspoon Chili powder
  • 1 teaspoon Smoked paprika
  • 2 tablespoon Butter
  • 1 clove Garlic, minced
  • 1 medium Onion, chopped
  • to taste Salt and pepper
  • 1 bunch Cilantro, chopped (for garnish)
  • 1 medium Lime, cut into wedges (for serving)

Instructions 

  1. 1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. 2. Add the corn kernels to the pot and cook for about 5 minutes, stirring occasionally.
  3. 3. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for 15 minutes.
  4. 4. Using a blender, puree the soup until smooth. Return the soup to the pot.
  5. 5. Stir in the heavy cream, chili powder, smoked paprika, salt, and pepper. Simmer for another 5 minutes.
  6. 6. Serve the soup hot, garnished with crumbled Cotija cheese, chopped cilantro, and lime wedges on the side.
