Main Ingredients
- 1 can black beans drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper diced
- 0.5 red onion finely chopped
- 1 avocado diced
- 0.25 cup cilantro chopped
- 1 lime juiced
- 2 tablespoon olive oil
- Salt and pepper to taste
In a large bowl, combine black beans, corn, red bell pepper, red onion, avocado, and cilantro.
In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
Pour dressing over the salad and toss to combine.
Serve immediately or refrigerate for later.
