Mexican Rice Recipe

Main Ingredients
- 1 cup long-grain white rice
- 2 tablespoons vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 2 cups chicken broth
- 1 teaspoon salt
- ½ teaspoon cumin
- ½ cup frozen peas and carrots
Heat oil in a large skillet over medium heat.
Add rice and cook, stirring frequently, until golden brown.
Add onion and garlic, and cook until onion is soft.
Stir in tomato sauce, chicken broth, salt, and cumin. Bring to a boil.
Reduce heat to low, cover, and simmer for 20 minutes.
Stir in peas and carrots, cover, and cook for an additional 5 minutes.
Fluff with a fork and serve.
