  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ¼ cup vegetable oil
  • 2 eggs beaten
  • 1 cup corn kernels fresh or frozen
  • 1 cup shredded cheddar cheese
  • 1 small jalapeño diced

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a baking dish.
  2. In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
  3. In another bowl, whisk together milk, vegetable oil, and beaten eggs.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the corn kernels, shredded cheddar cheese, and diced jalapeño.
  6. Pour the batter into the prepared baking dish and spread it out evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let it cool slightly before serving. Enjoy!
