- 4 egg whites at room temperature
- 1 cup granulated sugar
- ½ teaspoon cream of tartar
- 1 teaspoon vanilla extract
Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper.
In a clean mixing bowl, beat the egg whites on medium speed until foamy.
Add the cream of tartar and continue to beat until soft peaks form.
Gradually add the sugar, a tablespoon at a time, beating on high until stiff peaks form and the sugar is dissolved.
Beat in the vanilla extract.
Drop by rounded tablespoonfuls onto the prepared baking sheet.
Bake for 60 minutes, then turn off the oven and leave the meringues in the oven to cool completely.
