Ingredients 

Main Ingredients

  • 2 cups Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1 cup Red bell pepper diced
  • ½ cup Red onion thinly sliced
  • ¼ cup Olive oil
  • 2 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper freshly ground

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red bell pepper, and red onion.
  3. Drizzle the olive oil and lemon juice over the vegetables. Sprinkle with dried oregano, salt, and black pepper. Toss to coat evenly.
  4. Spread the vegetable mixture onto a baking sheet in a single layer.
  5. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized.
  6. Remove from the oven and let cool slightly before serving.
