Mediterranean Salmon Pasta Salad
A refreshing and healthy pasta salad with Mediterranean flavors and tender salmon.

Main Ingredients
- 200 g Salmon fillet skinless
- 250 g Pasta penne or fusilli
- 1 cup Cherry tomatoes halved
- 1 cup Cucumber diced
- ½ cup Red onion thinly sliced
- ½ cup Kalamata olives pitted and halved
- ¼ cup Feta cheese crumbled
- 2 tablespoon Olive oil
- 1 tablespoon Lemon juice freshly squeezed
- 1 teaspoon Dried oregano
- to taste Salt and pepper
Cook the pasta according to package instructions. Drain and set aside.
Season the salmon fillet with salt and pepper. Heat a pan over medium heat and cook the salmon for about 4-5 minutes on each side, or until fully cooked. Let it cool, then flake into pieces.
In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper. Pour over the pasta salad and toss to combine.
Gently fold in the flaked salmon. Serve immediately or refrigerate for later.
