Mediterranean Quinoa Salad Recipe

Main Ingredients
- 1 cup quinoa rinsed
- 2 cups water
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ½ cup red onion finely chopped
- ½ cup kalamata olives pitted and halved
- ¼ cup feta cheese crumbled
- ¼ cup extra virgin olive oil
- 2 tablespoon lemon juice freshly squeezed
- 1 teaspoon dried oregano
- to taste salt and pepper
1. Rinse the quinoa under cold water.
2. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Let it cool.
3. In a large mixing bowl, combine cherry tomatoes, cucumber, red onion, and kalamata olives.
4. Add the cooled quinoa to the bowl with vegetables.
5. In a small bowl, whisk together olive oil, lemon juice, and dried oregano. Pour over the quinoa and vegetables. Toss to combine.
6. Season with salt and pepper to taste. Sprinkle with crumbled feta cheese before serving.
