Ingredients 

Main Ingredients

  • 1 cup couscous
  • 1 cup boiling water
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup feta cheese, crumbled
  • ¼ cup black olives, sliced
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. 1. In a saucepan, bring the water to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  2. 2. In a large mixing bowl, combine the couscous, cherry tomatoes, cucumber, red onion, feta cheese, and black olives.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, and dried oregano. Pour over the couscous mixture and toss to combine.
  4. 4. Season with salt and pepper to taste. Serve chilled or at room temperature.
