Ingredients 

Salad Ingredients

  • 1 can chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • ½ cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup kalamata olives pitted and sliced
  • ¼ cup feta cheese crumbled

Dressing Ingredients

  • 3 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. 1. In a large mixing bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  2. 2. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and black pepper.
  3. 3. Pour the dressing over the salad and toss to combine.
