Salad Ingredients
- 1 can chickpeas drained and rinsed
- 1 cup cherry tomatoes halved
- ½ cup cucumber diced
- ¼ cup red onion finely chopped
- ¼ cup kalamata olives pitted and sliced
- ¼ cup feta cheese crumbled
Dressing Ingredients
- 3 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
1. In a large mixing bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
2. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and black pepper.
3. Pour the dressing over the salad and toss to combine.
4. Serve immediately or refrigerate for later.
