- 2 pieces Chicken Breasts boneless, skinless
- 1 cup Cherry Tomatoes halved
- 1 cup Cucumber diced
- ¼ cup Red Onion thinly sliced
- ¼ cup Kalamata Olives pitted and halved
- ¼ cup Feta Cheese crumbled
- 2 tablespoon Olive Oil
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Dried Oregano
- to taste Salt and Pepper
1. Season chicken breasts with salt, pepper, and dried oregano.
2. Heat a grill pan over medium-high heat and cook chicken for 5-7 minutes on each side, until fully cooked.
3. Let the chicken rest for a few minutes, then slice it into strips.
4. In a large mixing bowl, combine cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
5. Add the sliced chicken to the bowl.
6. Drizzle with olive oil and lemon juice, then toss everything together.
7. Season with additional salt and pepper to taste.
