Ingredients 

Main Ingredients

  • 2 cups Cooked quinoa
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • ½ cup Kalamata olives, pitted and sliced
  • ¼ cup Red onion, thinly sliced
  • ¼ cup Feta cheese, crumbled
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dried oregano
  • to taste Salt and pepper

Instructions 

  1. 1. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, olives, red onion, and feta cheese.
  2. 2. In a small bowl, whisk together the olive oil, lemon juice, and dried oregano. Season with salt and pepper to taste.
  3. 3. Pour the dressing over the quinoa mixture and toss to combine.
  4. 4. Serve immediately or refrigerate for up to 2 days.
