Ingredients 

Macaron Shells

  • 100 grams Almond flour
  • 100 grams Powdered sugar
  • 2 large Egg whites
  • 50 grams Granulated sugar
  • 1 teaspoon Matcha powder

Filling

  • 100 grams Sweetened azuki bean paste

Instructions 

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Sift almond flour, powdered sugar, and matcha powder together.
  3. In a mixing bowl, beat egg whites until foamy. Gradually add granulated sugar and beat until stiff peaks form.
  4. Gently fold the dry ingredients into the egg whites until well combined.
  5. Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheet.
  6. Tap the baking sheet on the counter to release air bubbles. Let sit for 20-30 minutes until a skin forms on the surface.
  7. Bake for 15 minutes. Let cool completely before removing from the parchment paper.
  8. Sandwich two macaron shells with sweetened azuki bean paste.
