Main Ingredients
- 2 cups dried gigante beans soaked overnight
- 1 cup olive oil
- 3 cloves garlic minced
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup fresh parsley chopped
1. Drain and rinse the soaked beans.
2. In a large pot, cover the beans with water and bring to a boil. Reduce heat and simmer for about 60 minutes, until beans are tender.
3. Drain the beans and transfer to a mixing bowl.
4. Add olive oil, garlic, red wine vinegar, oregano, salt, and pepper to the beans. Mix well.
5. Let the beans marinate for at least 30 minutes before serving. Garnish with fresh parsley.
