Ingredients

  • 1 large Butternut Squash peeled, seeded, and cubed
  • 2 tablespoon Olive Oil
  • ¼ cup Maple Syrup
  • ½ cup Pecans chopped
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss the cubed butternut squash with olive oil, maple syrup, salt, and black pepper.
  3. Spread the squash mixture evenly on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until the squash is tender and caramelized.
  5. In the last 5 minutes of roasting, sprinkle the chopped pecans over the squash and return to the oven.
  6. Remove from the oven and serve warm.
