Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 cup Mango, diced
  • 1 cup Cucumber, julienned
  • 8 pieces Rice paper wrappers
  • ¼ cup Fresh cilantro, chopped
  • ¼ cup Fresh mint, chopped

Instructions 

  1. 1. Boil the shrimp until cooked through, about 3-4 minutes. Drain and let cool.
  2. 2. Slice the shrimp in half lengthwise.
  3. 3. Prepare the rice paper wrappers according to package instructions.
  4. 4. Place a few pieces of shrimp, mango, cucumber, cilantro, and mint on each wrapper.
  5. 5. Roll the wrappers tightly to enclose the filling.
  6. 6. Serve immediately with your favorite dipping sauce.
