Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 cup Mango, diced
  • 1 cup Coconut milk
  • 1 tablespoon Curry powder
  • 1 teaspoon Ginger, minced
  • 1 teaspoon Garlic, minced
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Pepper

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and ginger, sauté until fragrant.
  3. Add curry powder and stir for a minute.
  4. Pour in coconut milk, bring to a simmer.
  5. Add shrimp and cook until pink and opaque.
  6. Stir in diced mango, cook for another 2-3 minutes.
  7. Season with salt and pepper to taste. Serve hot.
