Ingredients 

Main Ingredients

  • 1 cup jicama, julienned
  • 1 cup mango, julienned
  • ½ cup red bell pepper, julienned
  • ¼ cup red onion, thinly sliced
  • ¼ cup cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. In a large bowl, combine jicama, mango, red bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the slaw and toss to coat.
  4. Serve immediately or refrigerate until ready to serve.
