Main Ingredients
- 1 cup jicama, julienned
- 1 cup mango, julienned
- ½ cup red bell pepper, julienned
- ¼ cup red onion, thinly sliced
- ¼ cup cilantro, chopped
- 1 lime, juiced
- 1 tablespoon olive oil
- Salt and pepper to taste
In a large bowl, combine jicama, mango, red bell pepper, red onion, and cilantro.
In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
Pour the dressing over the slaw and toss to coat.
Serve immediately or refrigerate until ready to serve.
