Ingredients 

Main Ingredients

  • 2 ripe mangoes, peeled and diced
  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ cup chicken broth
  • 1 tablespoon lime juice
  • 1 tablespoon chopped fresh cilantro

Instructions 

  1. Season chicken with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chicken and cook until browned, about 5-7 minutes per side.
  4. Remove chicken and set aside.
  5. In the same skillet, add garlic, onion, and bell peppers. Cook until softened, about 5 minutes.
  6. Add mangoes and cook for another 3 minutes.
  7. Return chicken to the skillet, add chicken broth, and lime juice. Simmer for 10 minutes.
  8. Garnish with cilantro before serving.
