Mango & Black Bean Quesadillas

Ingredients 

Main Ingredients

  • 1 cup Black beans rinsed and drained
  • 1 cup Mango diced
  • 1 cup Shredded cheese cheddar or your choice
  • 4 large Flour tortillas
  • 1 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 pinch Salt to taste

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add black beans, cumin, chili powder, and salt. Cook for 2-3 minutes.
  3. 3. Remove from heat and stir in diced mango.
  4. 4. Place a tortilla in the skillet, sprinkle with cheese, and add the bean-mango mixture. Top with another tortilla.
  5. 5. Cook for 2-3 minutes on each side until golden brown and cheese is melted.
  6. 6. Repeat with remaining tortillas and filling.
  7. 7. Cut into wedges and serve warm.
