Mango & Black Bean Quesadillas

Main Ingredients
- 1 cup Black beans rinsed and drained
- 1 cup Mango diced
- 1 cup Shredded cheese cheddar or your choice
- 4 large Flour tortillas
- 1 tablespoon Olive oil
- 1 teaspoon Ground cumin
- 1 teaspoon Chili powder
- 1 pinch Salt to taste
1. Heat the olive oil in a skillet over medium heat.
2. Add black beans, cumin, chili powder, and salt. Cook for 2-3 minutes.
3. Remove from heat and stir in diced mango.
4. Place a tortilla in the skillet, sprinkle with cheese, and add the bean-mango mixture. Top with another tortilla.
5. Cook for 2-3 minutes on each side until golden brown and cheese is melted.
6. Repeat with remaining tortillas and filling.
7. Cut into wedges and serve warm.
