Mango Avocado Quinoa Salad Recipe

Main Ingredients
- 1 cup quinoa rinsed
- 2 cups water
- 1 mango diced
- 1 avocado diced
- ¼ cup red onion finely chopped
- ¼ cup cilantro chopped
- 1 lime juiced
- to taste salt and pepper
- 2 tablespoon olive oil
Rinse quinoa under cold water.
In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
Fluff quinoa with a fork and let it cool.
In a large bowl, combine quinoa, mango, avocado, red onion, and cilantro.
In a small bowl, whisk lime juice, olive oil, salt, and pepper.
Pour dressing over salad and toss gently to combine.
