Ingredients 

Main Ingredients

  • 2 lbs Lobster cooked and shelled
  • 2 tablespoon Butter
  • 1 cup Onion chopped
  • 1 cup Celery chopped
  • 1 cup Carrot chopped
  • 3 cloves Garlic minced
  • 1 cup Tomato Paste
  • 4 cups Fish Stock
  • 1 cup Heavy Cream
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. Melt butter in a large pot over medium heat. Add onion, celery, carrot, and garlic. Cook until vegetables are soft.
  2. Add tomato paste and cook for another 5 minutes.
  3. Add fish stock and bring to a boil. Reduce heat and simmer for 30 minutes.
  4. Blend the mixture until smooth. Strain through a fine mesh strainer back into the pot.
  5. Add heavy cream, salt, and pepper. Stir well and heat through.
  6. Add lobster meat and cook for another 5 minutes. Serve hot.
