Loaded Sweet Potato Avocado Toast

Main Ingredients
- 2 medium Sweet Potatoes peeled and sliced
- 1 large Avocado mashed
- 1 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Red Chili Flakes optional
- 1 tablespoon Lemon Juice freshly squeezed
Preheat the oven to 400°F (200°C).
Place the sweet potato slices on a baking sheet and drizzle with olive oil. Season with salt and pepper.
Roast in the oven for 25-30 minutes, or until tender and slightly crispy.
While the sweet potatoes are roasting, mash the avocado in a bowl and mix in the lemon juice, salt, and pepper to taste.
Once the sweet potatoes are done, let them cool slightly. Spread the mashed avocado on top of each slice.
Sprinkle with red chili flakes if using. Serve immediately.
