Ingredients

  • 6 large potatoes peeled and cubed
  • 1 cup sour cream
  • 1 cup cheddar cheese shredded
  • ½ cup bacon cooked and crumbled
  • ¼ cup green onions chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and return to the pot.
  3. Mash the potatoes until smooth. Stir in the sour cream, cheddar cheese, bacon, green onions, salt, and pepper.
  4. Transfer the potato mixture to a greased baking dish. Bake for 45 minutes, or until the top is golden brown and bubbly.
  5. Let cool for a few minutes before serving. Enjoy!
