Ingredients 

Main Ingredients

  • 1 cup lentils
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 carrot, sliced
  • 1 zucchini, sliced
  • 2 tablespoon soy sauce
  • Salt and pepper to taste

Instructions 

  1. Rinse lentils and cook in 2 cups of water until tender, about 20 minutes. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add onion and garlic, sauté until fragrant.
  3. Add bell pepper, carrot, and zucchini. Cook until vegetables are tender.
  4. Stir in cooked lentils and soy sauce. Season with salt and pepper.
  5. Cook for another 5 minutes, stirring occasionally.
