Main Ingredients
- 1 cup Lentils rinsed
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 2 cups Carrots chopped
- 2 cups Celery chopped
- 1 can Diced Tomatoes 14.5 oz can
- 6 cups Vegetable Broth
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt or to taste
- 0.5 teaspoon Black Pepper or to taste
- 2 tablespoon Olive Oil
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, and sauté until softened.
3. Add the carrots and celery, and cook for another 5 minutes.
4. Stir in the lentils, diced tomatoes, vegetable broth, cumin, paprika, salt, and pepper.
5. Bring to a boil, then reduce heat and let it simmer for 30-35 minutes, or until lentils are tender.
6. Adjust seasoning if needed and serve hot.
