Main Ingredients
- 1 cup Dry lentils rinsed
- 1 tablespoon Olive oil
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- 1 cup Tomato sauce
- 1 cup Vegetable broth
- 8 pieces Taco shells
- 1 cup Lettuce shredded
- 1 cup Cheese shredded
1. Cook the lentils according to package instructions.
2. In a skillet, heat olive oil over medium heat. Add chopped onion and cook until soft.
3. Add minced garlic, cumin, and chili powder. Cook for another minute.
4. Add cooked lentils, tomato sauce, and vegetable broth. Simmer for 10 minutes.
5. Fill taco shells with lentil mixture. Top with shredded lettuce and cheese.
