Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed and drained
  • 2 cups Water
  • 1 cup Parsley finely chopped
  • ½ cup Mint finely chopped
  • 1 cup Tomatoes diced
  • ¼ cup Olive Oil
  • ¼ cup Lemon Juice freshly squeezed
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. In a saucepan, bring the water to a boil. Add the lentils and cook for 20-25 minutes until tender. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooled lentils, parsley, mint, and tomatoes.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. 4. Pour the dressing over the lentil mixture and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
