Lentil Sweet Potato Curry Recipe
A hearty and flavorful curry made with lentils and sweet potatoes.

Main Ingredients
- 1 cup lentils
- 1 large sweet potato diced
- 1 onion chopped
- 2 cloves garlic minced
- 1 can coconut milk
- 2 cups vegetable broth
- 1 tablespoon curry powder
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until soft.
Add curry powder, cumin, and turmeric. Stir for 1 minute.
Add lentils, sweet potato, coconut milk, and vegetable broth. Bring to a boil.
Reduce heat and simmer for 25-30 minutes, until lentils and sweet potato are tender.
Season with salt and pepper. Garnish with fresh cilantro.
