Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Vegetable Broth
  • 1 cup Diced Tomatoes canned
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 2 tablespoon Olive Oil
  • 2 cups Spinach fresh

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté until softened.
  3. Add rinsed lentils, vegetable broth, and diced tomatoes. Stir well.
  4. Season with cumin, paprika, salt, and black pepper. Bring to a boil.
  5. Reduce heat and simmer for 30-35 minutes, or until lentils are tender.
  6. Stir in fresh spinach and cook for another 5 minutes.
  7. Serve hot and enjoy!
