Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 4 cups Vegetable Broth
  • 1 cup Chopped Spinach fresh or frozen
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add lentils, vegetable broth, cumin, salt, and pepper. Bring to a boil.
  5. Reduce heat and let it simmer for 20-25 minutes, until lentils are tender.
  6. Stir in chopped spinach and cook for another 5 minutes.
  7. Serve hot.
