Lentil Spinach Soup Recipe

Main Ingredients
- 1 cup Lentils rinsed
- 4 cups Vegetable Broth
- 1 cup Chopped Spinach fresh or frozen
- 1 Onion chopped
- 2 cloves Garlic minced
- 1 tablespoon Olive Oil
- 1 teaspoon Cumin
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
Heat olive oil in a large pot over medium heat.
Add chopped onions and cook until translucent.
Add minced garlic and cook for another minute.
Add lentils, vegetable broth, cumin, salt, and pepper. Bring to a boil.
Reduce heat and let it simmer for 20-25 minutes, until lentils are tender.
Stir in chopped spinach and cook for another 5 minutes.
Serve hot.
