Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 cups Spinach chopped
  • 1 cup Rice rinsed
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 2 tablespoon Olive oil
  • 3 cups Vegetable broth
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic. Sauté until translucent.
  3. Add lentils and rice. Stir to coat with oil.
  4. Pour in vegetable broth. Bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes.
  6. Add chopped spinach, salt, and pepper. Stir well.
  7. Cover and cook for another 5-10 minutes, until spinach is wilted and rice is tender.
  8. Fluff with a fork and serve warm.
