Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion and minced garlic. Sauté until translucent.
Add lentils and rice. Stir to coat with oil.
Pour in vegetable broth. Bring to a boil.
Reduce heat, cover, and simmer for 20 minutes.
Add chopped spinach, salt, and pepper. Stir well.
Cover and cook for another 5-10 minutes, until spinach is wilted and rice is tender.
Fluff with a fork and serve warm.
