Main Ingredients
- 1 cup lentils rinsed
- 1 medium onion chopped
- 2 cloves garlic minced
- 2 medium carrots chopped
- 1 stalk celery chopped
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
- 2 tablespoon olive oil
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onions, garlic, carrots, and celery. Cook until softened, about 5-7 minutes.
3. Stir in the cumin and paprika, cook for another minute.
4. Add the lentils, diced tomatoes, and vegetable broth. Bring to a boil.
5. Reduce heat to a simmer, cover, and cook for 30-35 minutes, until lentils are tender.
6. Season with salt and pepper to taste. Serve hot.
