Ingredients 

Main Ingredients

  • 1 cup lentils rinsed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots chopped
  • 1 stalk celery chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 2 tablespoon olive oil

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onions, garlic, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. 3. Stir in the cumin and paprika, cook for another minute.
  4. 4. Add the lentils, diced tomatoes, and vegetable broth. Bring to a boil.
  5. 5. Reduce heat to a simmer, cover, and cook for 30-35 minutes, until lentils are tender.
  6. 6. Season with salt and pepper to taste. Serve hot.
