Lentil Sloppy Joes Recipe
A hearty, vegetarian twist on the classic Sloppy Joes using lentils.

Main Ingredients
- 1 cup dry lentils rinsed
- 1 tablespoon olive oil
- 1 onion diced
- 1 bell pepper diced
- 2 cloves garlic minced
- 1 cup tomato sauce
- 2 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 cup water
- 4 burger buns toasted
1. Cook lentils according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, and cook until softened, about 5 minutes.
3. Add garlic and cook for another minute.
4. Stir in cooked lentils, tomato sauce, tomato paste, Worcestershire sauce, brown sugar, chili powder, smoked paprika, and water. Simmer for 10-15 minutes until thickened.
5. Serve lentil mixture on toasted burger buns.
