Preheat your oven to 375°F (190°C).
In a large pot, combine lentils, vegetable broth, diced tomatoes, onion, garlic, cumin, and paprika. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.
Season the lentil mixture with salt and pepper to taste.
Transfer the lentil mixture to a baking dish and spread evenly.
Spread the prepared mashed potatoes over the top of the lentil mixture.
Bake in the preheated oven for 20 minutes, or until the top is golden brown.
