Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 cup Feta Cheese crumbled
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 0.25 cup Red Onion finely chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Cook the lentils in a saucepan with water until tender, about 20-25 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooked lentils, feta cheese, cherry tomatoes, cucumber, and red onion.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. 4. Pour the dressing over the salad and toss to combine. Serve chilled or at room temperature.
