Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 cups Carrots chopped
  • 4 cups Kale chopped
  • 1 medium Onion diced
  • 3 cloves Garlic minced
  • 6 cups Vegetable Broth
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of oil.
  2. 2. Add the diced onion and minced garlic. Sauté until softened.
  3. 3. Add the chopped carrots and cook for another 5 minutes.
  4. 4. Stir in the lentils, vegetable broth, salt, and pepper. Bring to a boil.
  5. 5. Reduce heat and let it simmer for 20 minutes, or until lentils are tender.
  6. 6. Add the chopped kale and cook for another 5 minutes.
  7. 7. Adjust seasoning if needed. Serve hot.
