Lentil Carrot Feta Salad Recipe
A refreshing and nutritious salad with lentils, carrots, and feta cheese.

Main Ingredients
- 1 cup Lentils rinsed
- 2 cups Water
- 2 large Carrots grated
- 1 cup Feta Cheese crumbled
- 2 tablespoon Olive Oil
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper freshly ground
- 1 tablespoon Fresh Parsley chopped
1. Rinse the lentils under cold water.
2. In a pot, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender. Drain and let cool.
3. In a large mixing bowl, combine the cooked lentils, grated carrots, and crumbled feta cheese.
4. Add olive oil, lemon juice, salt, and black pepper. Toss to combine.
5. Garnish with chopped fresh parsley before serving.
