Ingredients 

Main Ingredients

  • 1 cup lentils
  • 2 medium beets roasted and diced
  • ¼ cup feta cheese crumbled
  • ¼ cup walnuts toasted
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions 

  1. Cook lentils according to package instructions. Drain and let cool.
  2. Roast beets at 400°F for 30 minutes or until tender. Let cool and dice.
  3. In a large bowl, combine lentils, beets, feta, and walnuts.
  4. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper. Toss to combine.
