Lentil Beet Salad Recipe
A healthy and delicious salad with lentils, roasted beets, feta cheese, and walnuts.

Main Ingredients
- 1 cup lentils
- 2 medium beets roasted and diced
- ¼ cup feta cheese crumbled
- ¼ cup walnuts toasted
- 2 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Cook lentils according to package instructions. Drain and let cool.
Roast beets at 400°F for 30 minutes or until tender. Let cool and dice.
In a large bowl, combine lentils, beets, feta, and walnuts.
Drizzle with olive oil and balsamic vinegar. Season with salt and pepper. Toss to combine.
